Song lyrics are in my mind; "the days dwindle down to a precious few, September, November . . ." This year is nearing its end. Arising to temperatures in the low to mid 50's is invigorating and the mind begins thinking of warm delights.There is an excellent blog called "Vegan Dad" that has inspired me. Vegan Dad's wonderful pictures of his food creations for his family often make my mouth water. He tells us his experience and his kids' reactions, both good and bad to his efforts. I appreciate his candor and the wonderful recipes he shares. Being various degrees of a vegetarian for over 38 years, his blog is genuinely relate-able.
This morning my spirit called to create a holiday repast, which I decided to share here. I love apples. From
childhood in the Midwest, eating green apples all summer long, to adult life apples are a consistent part of my diet. In cool weather, particularly as the holidays near, the idea of baked spiced apples becomes irresistible.Baked Spiced Apples are easy, quick, delicious and naturally sweet.
6 Apples washed and cored
1/4 teaspoon each of Cinnamon and Ginger
1/8 teaspoon each of Ground Cloves and Nutmeg
1/4 cup Raisins
1/8 teaspoon Hazelnut Extract
3 cups Water

Arrange apples in a skillet with a tight fitting lid. Add spices, raisins and water to cover the apples. Cover skillet and bring just to a boil. Reduce heat to simmer for 25 minutes. The skins may burst to release steam. Test for doneness, they should be soft. Turn off heat and allow to "rest" covered until ready to serve.
Bakes spiced apples are an excellent meal alone or as a side with hot cereal. Enjoy and Happy Holidays!
